Chicken Tortilla Soup

Looking for something to make that is fast?  Tastes good? Then I have the perfect the perfect recipe for you...Chicken Tortilla Soup! I made this tonight since it was cool outside.  It really hit the spot.  This is recipe can be made with less sodium with just a few ingredients.


Ingredients

4 flour tortillas
1/2 pound cooked chicken breast
2 cans (14 oz each) chicken broth
I cup salsa
1 cup frozen corn
1 cup cheddar cheese (opitional for lower sodium)

Cut the tortillas into thin strips. In a large pan add tortillas, broth, salsa, corn, and chicken.  Bring to a boil, reduce heat and simmer 15 minutes.  Ladle into bowls and add cheese on top.  Serves 4

Notes:
We have had this discussion that I have to have low sodium meals. The broth in this contains a whopping amount if you use can broth.  You can lower it tremendously by making your own or using a low sodium chicken base. Just measure out your water and then add 3/4 teaspoon per cup. Easy peasie!











The other item in this is salsa.  Again use a low sodium salsa.  The best and lowest I have found is from Trader Joe's. It is great.




If you add no cheese, then again this lowers the sodium content even more. There you have it.  Fast, easy and tasty!
